Sugar Bistro Galle
The Old Dutch Hospital, Galle is one of the oldest buildings in the World Heritage Site of the Galle Fort, dating back to the Dutch colonial era in Sri Lanka. In 2014, the building was converted into a shopping and dining precinct, with the historic architecture having been preserved. Wedged between jewellery outlets and casual dining restaurants, a small interesting space was the location for the new Sugar Bistro in Galle. Presenting challenges due to the age of the building and restrictions in place, the space was designed to include a full kitchen and inside dining.
